Im almost done with making my chef shield and wanna switch back to fishing guild to finish the ki's. Can i do this without losing ki and gear from cooking guild?

Yes, I have 5 different aprons so far. going for all of them.
I have KI's for several guilds.
point of note: the day you switch guilds you won't be able to earn guild points, so I suggest you switch after cap'ing cooking GP for the day.
