Not really sure how desythesis works but here's my question:
What's the chance of desynthing something successfully when you're like...50 levels below it? lol. Will it even let you try and desynth it?

Can't craft recipes if a required crafting skill is more than 15 levels below the skill cap. This is true for all synths and desynths.
Not sure if all Lightning Crystal synths are desynths, and if all desynth recipes are with Lightning Crystals.
I know there are a couple of Wind Crystal desynth-like synths involving Gigas Socks, for example, but do they have the large break chance that Lightning Crystal desynths have?

You can desynth Tonberry Lanterns with water crystals. The break rate feels just as high as desynthing other items with lightning crystals. Not sure about gigas socks with wind crystals break rate.
Wind crystal + gigas socks are a desynth. Yes break rate is the same as any other desynth.
All lightning crystal synths are desynth. I believe the level cap is 10 below, not 15. 99% sure on that. I agree w/ Davsa. Desynth's are just plain tricky no matter what you do. Dont count on them for anything. ^^

Also, I didn't know about the 10cap for Desynths.

Desynth can be with a crystal other than lightning. Also on the reverse side of that you can have a lightning crystal synth that is not a desynth.
Ffxi wiki will tell you which are synth/desynth.
Failing that, you'll notice a 50%~80% break rate on desynth depending on your moghancement.
