Not to sound like a total jerk, but in my books, the cook has total control. If you're making it, you determine what and when anyone is eating. If it's too late or they don't like it, tough ***. They can make something else themselves or food is simply a credit card and a phone call away too.
Cooking for more than one person tends to be too much work to warrant touchy-feely considerations for others; so I can't put any fault on your part.
Especially since you're going out of your way to make the damned thing digestible for another family member.

the one time he comes over and he gives me a hug and is then like "oh i think im getting sick..."

and i havent had health insurance since he decided to drop me off his the very second he found out i didnt have school for a semester

It's a great place for the socially awkward to begin and get as comfortable as the dialogue will make the person you're talking to. But I'm sorry tonight ended up so shitty for ya, hopefully there is a cheap way to haste grandfather's food preparation in the future or something similar to relieve things

@Hito she's not that disabled but she's no spring chicken either.. She fell in the hallway the other day and couldn't get up, if I hadn't came along and helped her up she probably woulda been there quite awhile.. Me and her have this don't come into each other's bedroom relationship.. She only comes in here when the wife is home and drags her in here, and I always put up the food after I get my plate (under normal circumstances her and my wife would have gotten theirs before I even went to get mine) so it's not like it'd just be sitting on the stove for her to go and check.

@Art the only part I feel bad about is her overhearing me and wife talking/arguing [would be hard to call it an argument but in a way it was] I don't really feel bad about it being so late, that was out of my control, plus I've been on my feet all day cooking and washing dishes, it's a miracle I didn't just say "*** this I'll cook our food tomorrow" and she's not a picky eater or anything, but she'd never know dinner is ready without someone going to tell her, which as I said is my wife's job because I just feel uncomfortable doing it. But dinner came way later tonight than usual and my wife decided to go to sleep before it was done.

Hell, I do that for my cats when I feed them too xD

There is no talking between us <_< we don't talk, well I mean we don't just go out of way to avoid it, if it's something important or we need to tell the other something like "wife wants you to come out to the car" or "wife wants to know if you need anything from the store on the way home" then we'll talk, but we don't have discussions.. Me and her literally have no common interests, and I *** suck at making small talk.. So there's really nothing to talk about unless it's necessary conversation.

It's 11 PM and we have to struggle to get our 7 year old to go to sleep as is.. If I shouted anything, this late, wife would wake up and castrate me.

Living with other people is hard. My brother in law lived with us for a year, and even though we get along fine, we fought the entire year he lived there. Over everything. Living with someone else is a difficult situation all-round, and it seems even more so with in-laws. And not having any privacy with your wife is not going to help anything at all. Being dead silent during other bedroom fun-times would be less than satisfying, I should think, and without that satisfaction every once in awhile you get stressed out.

Now couple that with the fact that you also had to not only cook for your dad but also grind up his food makes it that much more difficult, the apparent lack of communication and your bashfulness in speaking to your MIL didn't help either.

Also, Annika seems pretty laid-back and happy. Did she have a rough day at work that made her more likely to argue? Look into that and see if she's feeling blue for some other reason and subconsciously taking it out on you. Women do that, and it's usually accidental. :-( My husband points out to me all the time that I'm mad over something and jumping on him for it when he didn't do anything to deserve it. It happens.

Now, about the cooking. Art is right that it's generally under the chef's control. I don't usually have problems with a dinner being very late, but in the circumstance that someone doesn't like it-- tough. Last time I babysat, the little girl didn't like the dinner I cooked her. I told her she could come back and try it again later when she was more hungry, or she was welcome to make herself a sandwich. (She was quite old enough to make a sandwich or omelette or anything simple on her own.) It highly annoys me when a cook changes their plan based on a picky eater. My aunt does it all the time to my cousin's kid. She'll spend hours making a perfect lasagna, and the kid insists on something else. She'll toss the lasagna and make something else. That kid is going to grow up to be the brattiest, pickiest, most annoying eater in the world.

Now, another thing to remember is that when people get hungry before a meal, there's usually a snack or something they can munch on. Cereal, toast, yogurt-- it makes sense that if any of them were just plain starving plumb to death and they thought their belly buttons were bouncing like mad off their backbones-- they would have grabbed a snack. The exception would be if your MIL was incapable of doing such, and in that case, would she have felt comfortable asking for a snack?
