The stuff on top is bread crumbs/eggs/w/e with some mustard mixed in and then the ham goes in the oven for like 10 minutes
Can eat it without it but it tastes better with that on top. Really good ham to have on sandwiches

Turkey's not really hard to keep moist. It's more an issue of no one wanting to take the steps to prevent it.
Most of which is basically packing aromatic butter under the skin, bacon over the breast and stuffing the cavity with aromatics.
