I'd love to have a 1955 Ford Thunderbird. I'd keep it stock except I'd swap the old AM stereo with one of those ones that are made to look exactly like factory except they are AM/FM and update the dash speaker. I'd keep the originals though.

If I had to pick a classic car and build it to be my daily driver, 1967 Chevrolet Camaro with an LS engine and a matching auto transmission because I am dangerous as hell driving stick. >.> Use all the gears! In 5th gear doing 95 mph in the Walmart parking lot.
I REALLY wanted to say a 66 Mustang but Mustangs and Falcons have their issues with resto-modding. Namely the shock tower struts being in the way of power brakes and a Modular V8 requiring MASSIVE alteration of the front end. Best choice for a cheap Mustang 'daily driver' EFI engine would probably be a modified Cologne V6 like is in my Explorer and likely Spath's truck.
